Fresh Adriatic Fish — Caught, Brought, Prepared
The fish on your plate tonight was still in the sea this morning. We work with two fishermen from the harbour next door — what they catch by sunrise is on the menu by noon. Seasonal varieties, daily availability, transparent weighing in front of you before cooking.
Who brings us our fish
Our fishermen are Marko and Ivica from Ražanac harbour (5 minutes’ walk from the restaurant). Fishing is traditional: longlines, nets, hooks for octopus. No trawling, no farmed fish sold as "fresh". What they catch is what we have. In months when the sea doesn’t cooperate, we’re honest that there is no fresh fish — we never serve frozen as fresh.
Seasonal varieties — what and when
Spring (March–May): scorpionfish, sea bass, sole, hake. Summer (June–September): gilthead bream, sea bass, mackerel, sardines, squid. Autumn (October–November): octopus, lobster, scampi. Winter (December–February): cod (salt and fresh), tuna, late octopus. Year-round: mussels from Pag island, oysters when available.
Preparation methods
Grilled with olive oil and rosemary (the classic). Salt-baked (sea bass or bream sealed in a sea-salt crust, broken open at the table). Boiled with potatoes, capers and olives (lešo). Octopus under the iron bell (24 h preparation — one of our most-asked-for dishes). Scampi and mussels buzara (white wine, garlic, parsley and pancetta sauce).
Prices — by weight and by piece
Most whole fish is weighed in front of you. Bream/sea bass: €60–75/kg depending on size and season. Sea bass: €80/kg. Octopus under the bell: €32/person (potatoes included). Lobster: market price, checked daily (around €90–120/kg). Scampi buzara: €28/portion. Mussels: €18/kg.
What to order for two
Classic for two: one 800–1000 g bream grilled whole (around €50) with young potatoes and Swiss chard. To try more: fish tasting (4 small portions, €65/person) — includes tuna carpaccio, mussels buzara, sole in butter and grilled mackerel. Wine: Pošip from Korčula or Malvasia from Istria.
